Abstract:
Objective:To investigate inhibitory activity on putrefactive bacteria in food process and storage of the extract and fractions of Canarium album for finding its active fraction. Methods:Antibacterial circle method was conducted to test the inhibitory activity to Staphylococcus aureus, P. aeruginosa, Escheriehia coli, B. subtilis, R. stolonifer, Aspergillus niger, Penicillium, Saccharomyces cerevisiae and Cl. perfringens. Results:The extract of Canarium album had good inhibitory activity on tested bacteria and yeasts, but it had no inhibitory activity on fungus. The acetic ester fraction had good inhibitory activity on Staphylococcus aureus, Escheriehia coli and B. subtilis. Conclusion:The extract of Canarium album had good inhibitory activity on tested bacteria and yeasts, the acetic ester fraction was the antibacterial activity fraction of Canarium album.
