Abstract:
Bovine colostrum has high nutritional value and is rich in functional active components.The concentrations of many nutrients (proteins, vitamins, minerals etc.) and biologically active substances (immunoglobulins, enzymes, hormones, growth factors etc.) are much higher in colostrum than in milk, and are worth of exploitation.The aim of the present paper was to review the differences in chemical composition between bovine colostrum and milk to provide a basis for the full development of bovine colostrum products.
