Abstract:
Fuzhuan brick-tea was treated with γ irradiation, followed by microbio and physicochemical property detection.The results of microbiological detection showed that 4kGy γ irradiation could kill 90% of mould.The analysis of physicochemical property showed that irradiation did not affect the release of fluoride, whereas decreased the content of polyphenols, amino acids, caffeine and increased the content water-soluble sugars and water extraction.In general, the irradiation improved sensory quality of brick-tea.
