摘要: 淀粉酯是一种经化学或酶法改性制备的改性淀粉,本文综述了淀粉酯的制备及应用技术。阐述了柠檬酸淀粉酯、长链脂肪酸淀粉酯、烯基琥珀酸淀粉酯、淀粉醋酸酯、淀粉磷酸酯、淀粉硫酸酯的制备、性质及应用。展望了酯化淀粉的研究方向,为淀粉酯的进一步研究奠定基础。Abstract: Esterified starch is a chemically or enzymatically modified starch.The recent progress of the preparation,properties,and application in citrate starch,long-chain fatty acid esters of starch,starch sodium alkeylsccinate,acetate starch,phosphorylated starch,and sulfate starch were reviewed.The prospect in esterified starches was also discussed,which would present relevant information for further study.
