Abstract:
Fruits and vegetables are essential foods for peoples' daily life, and they are fundamental products for the health and nutrition of human being.A wide variety of postharvest factors affect the quality, nutrition and safety of fruit and vegetable products.This paper systematically summarized the influences of the internal factors of fruits and vegetables, fresh-keeping and storage methods, microorganism, packaging and transportation and other factors on the nutrition, quality and safety of fruit and vegetable products in an attempt to provide new information for future study.
