Abstract:
The antioxidant activities of Salvia officinalis (sage) extracts from various perspectives were evaluated.Sage powder were extracted with 50% acetone and 70% ethanol, the polyphenol content and antioxidant activity of sage extracts were determined by Folin-Ciocalteu method and DPPH radical scavenge, chelating Fe2+, reducing power, phosphomolybdenum methods, respectively.The result indicated that the polyphenol content of extract in 50% acetone was significantly higher than extract in 70% ethanol.Both of the sage extracts possessed proper free radical scavenging activity, metal ions chelating activity, reduction activity and total antioxidant ability.In general, except for reducing power, the antioxidant activity of sage extract in 50% acetone was higher than in 70% ethanol.
